You might have caught this one on my stories last week (when I forgot to add the LEMON JUICE to the instructions for lemonade. I was very, very tired, friends) but if not, or if you want it for reference, here's our recipe for Mint Lemonade.
A quick disclaimer: my school is vegan and I use a little bit of sugar in my recipes, with the idea that it's often only a little, we can't use honey, and we'll all survive. I try to always provide ideas for alternatives, so please feel free to adjust recipes accordingly. You know what you feel good serving your family.

Ingredients:
- 2 lemons, halved & juiced. Our juicer is adorable, but so hard to use. I almost always have to help push. It's not ideal.
- Sugar to taste. You could use honey, agave syrup, or other natural sweeteners.
- A few mint leaves.
- A few cups of water. This is very much a "to taste" recipe. Try it often and see how it tastes to you and the children.

Preparation:
- Pick a few mint leaves. We are so lucky to have fresh mint growing right outside. We were able to step out and grab a few leaves. You could use store-bought, or omit the mint alltogether. Mash with a mortar & pestle or shred by hand until fragrant. Add to the water.

- Slice & juice the lemons. An older child would be able to help slice the lemons. In this case, I did it beforehand. We talked about the smell and feel of the lemons & mint. Add the lemon juice to the water.
- Add sweetener, pausing to taste.

- Mix well and refrigerate for a few hours or overnight. We made ours first thing in the morning and served it with morning snack. It was delicious!
